Safe Holiday : Cooking The Turkey

With the turkey dinner just days away, it's important that consideration go into how the turkey is prepared.

The turkey should be thawed completely.

Enough time must be allowed to cook a whole turkey. (A 20-pound turkey needs two to three days to thaw completely when thawed in the refrigerator at a temperature of no more than 40 degrees Fahrenheit. A stuffed turkey needs 4 ¼ to 5 ¾ hours to cook completely).

A food thermometer should be used so to ensure that 165-180 degrees Fahrenheit is achieved.

The Injuryboard has focusing on food issues , a review of these topics can prevent and help with food problems all year long.

Have a safe and happy Thanksgiving!
Originally posted at InjuryBoard by Mike Bryant

Stork Craft Recalls 2.1 Million Drop Side Cribs

Today, The U.S. Consumer Product Safety Commission and Stork Craft Manufacturing Inc., of British Columbia, Canada recalled 2.1 million Stork Craft drop-side cribs. drop-side plastic hardware can break, deform, or parts can become missing. In addition, the drop-side can be installed upside-down, which can result in broken or disengaged plastic parts. All of these problems can cause the drop-side to detach in one or more corners. When the drop-side detaches, it creates space between the drop-side and the crib mattress. The bodies of infants and toddlers can become entrapped in the space which can lead to suffocation. Complete detachment of drop-sides can lead to falls from the crib.

CPSC, Health Canada, and Stork Craft are aware of 110 incidents of drop-side detachment; 67 incidents occurred in the United States and 43 in Canada. The incidents include 15 entrapments; 12 in the U.S. and three in Canada. Four of the entrapments resulted in suffocation: a 7-month-old in Gouverneur, N.Y.; a 7-month-old in New Iberia, La.; a 6-month-old in Summersville, W.Va.; and a 9-month-old in Bronx, N.Y. Included in these incidents are 20 falls from cribs; 12 in the U.S. and eight in Canada. Fall injuries ranged from concussion to bumps and bruises.

http://www.youtube.com/watch?v=t2JehETgNjc&feature=player_embedded

The cribs involved in these incidents had plastic drop-side hardware that had broken, missing, or deformed claws, connectors, tracks, or flexible tab stops; loose or missing metal spring clips; stripped screws; and/or drop-sides installed upside-down.

The cribs were sold at major retailers including BJ’s Wholesale Club, J.C. Penney, Kmart, Meijer, Sears, USA Baby, and Wal-Mart stores and online at Amazon.com, Babiesrus.com, Costco.com, Target.com, and Walmart.com from January 1993 through October 2009 for between $100 and $400.

This recall includes Stork Craft cribs with manufacturing and distribution dates between January 1993 and October 2009. This recall also includes Stork Craft cribs with the Fisher-Price logo that have manufacturing dates between October 1997 and December 2004. The Stork Craft cribs with the Fisher-Price logo were first sold in the U.S. in July 1998 and in Canada in September 1998. The cribs were sold in various styles and finishes. The manufacture date, model number, crib name, country of origin, and the firm’s name, address, and contact information are located on the assembly instruction sheet attached to the mattress support board. The firm’s insignia “storkcraft baby” or “storkling” is inscribed on the drop-side teething rail of some cribs. In Stork Craft cribs that contain the “Fisher-Price” logo, this logo can be found on the crib’s teething rail, in the manufacturer’s instructions, on the assembly instruction sheet attached to the mattress support board, and on the end panels of the Twinkle-Twinkle and Crystal crib models. The cribs were manufactured in Canada, China and Indonesia.

Consumers should immediately stop using the recalled cribs and wait for the free repair kit, and do not attempt to fix the cribs without the kit. They should find an alternative, safe sleeping environment for their baby. Consumers should contact Stork Craft to receive a free repair kit that converts the drop-side on these cribs to a fixed side. Stork Craft can be contacted at (877) 274-0277or through their website www.storkcraft.com

If you or a family member is injured by a product, you need to get immediate medical care. If there is a significant affect or injury, you should contact an attorney concerning the problem. Early investigation can include the collection of product, checking recall alerts, and the proper notifying of those who caused the problem.
Originally posted at InjuryBoard by Mike Bryant

Popular Food Can Make You Sick

This past week, the Center for Science in the Public Interest released the list of foods that have the most reported food illnesses. Unfortunately, they may be most people's favorites. This may mean a couple of things:

- All foods can make us sick

- That we don't do a very good job of preparing the foods we eat

- That the more mass produced a food product is, there may be more risks in those processes.

They found that since 1990 the top ten list was:

leafy greens were involved in 363 outbreaks and about 13,600 illnesses.

Eggs, involved in 352 outbreaks and 11,163 reported cases of illness.

Tuna, involved in 268 outbreaks and 2,341 reported cases of illness.

Oysters, involved in 132 outbreaks and 3,409 reported cases of illness.

Potatoes, involved in 108 outbreaks and 3,659 reported cases of illness.

Cheese, involved in 83 outbreaks and 2,761 reported cases of illness.

Ice cream, involved in 74 outbreaks and 2,594 reported cases of illness.

Tomatoes, involved in 31 outbreaks and 3,292 reported cases of illness.

Sprouts, involved in 31 outbreaks and 2,022 reported cases of illness.

Berries, involved in 25 outbreaks and 3,397 reported cases of illness.

The problems were mostly caused by norovirus, E. coli, and salmonella bacteria. Unfortunately, Smith DeWaal the CSPI's head of food safety programs, called the list "the tip of the iceberg" when it comes to food-borne illnesses in the U.S. Because, not all outbreaks are reported to public health authorities.

How do you protect yourself? Sarah Klein, lead author of the report recommends "defensive eating," including keeping food cold and cooking it thoroughly, chilling oysters and avoiding them when raw, and avoiding raw eggs or using them in homemade ice cream.

Originally posted at InjuryBoard by Mike Bryant

Safe Holiday: Picking Your Turkey

The key to the whole meal is picking the turkey. A recent government study suggests that that isn't a simple task. “Last year USDA released data on turkey contamination that showed 90% of the turkeys tested in 1996 and 1997 were contaminated with Campylobacter and 18% were contaminated with Salmonella,” said Caroline Smith DeWaal, director of Food Safety for CSPI. “This year, CSPI hoped to document positive changes in turkey safety due to the new mandatory hazard control systems (called HACCP) now used in most turkey plants. Instead, what we found was shocking.”

Tests conducted by CSPI on 50 turkeys from five cities found:

A total of 16% of all turkeys tested were contaminated with Campylobacter.

Fresh turkeys in the sample were significantly more likely than the frozen turkeys to be contaminated.

Turkeys from Los Angeles were more contaminated than turkeys from Washington, DC, New York, Chicago, and Miami.

None of the turkeys tested were contaminated with Salmonella.

“Consumers can improve their odds of avoiding food poisoning by washing their hands frequently, using safe food-handling practices, such as washing preparation counters thoroughly with hot soapy water before and after handling their turkey, and by cooking the turkey to 180°,” concluded DeWaal.
Eden Prairie Crash Leaves One Dead

Friday night, A man died after his car going south on Flying Cloud Drive crossed into the northbound lanes and hit a another car head-on. The driver of the northbound car was hospitalized. There were also two minors that were passengers and said to be unharmed. Investigation continues as to what happened.

This death, like any other on Minnesota roads is particularly unfortunate considering it comes two months after the Minnesota Department of Public Safety (MDPS) reported that overall the number of highway deaths has been down for 2009 with more than 300 people having died this year in Minnesota traffic collisions. There were 458 deaths in 2008, which was a drop from 510 in 2007.

As with any death in a Minnesota motor vehicle collision, there are many issues that will need to be reviewed. My partner, Joe Crumley, addressed this topic in a recent article for the Minnesota Lawyers Trial magazine. I was interviewed last year on the same topic. In this accident sorrow for the families and friends of those involved goes out.
Originally posted at InjuryBoard by Mike Bryant

Drunk Driver Who Killed Local Superintendent Gets Four Years.

Some time ago, I wrote about the rear end accident that killed a well known local superintendent. A sad case that affected all of the students and their families who had ever dealt with him. Having worked for the district since the 80's, he was involved in the education of hundreds of young people. He was also known for being involved in all of the schools building projects.

The driver of the car who caused the tragic collision plead guilty to criminal vehicular homicide. Initial testing showed his blood-alcohol level to be 0.194. As a result he was sentenced to more than four years in prison.

The tragedy of the case is clear. As I have written in other cases like this, it really has such a large affect on everyone involved. Multiple families are affected and are forever changed with a senseless death. Hopefully, all students will learn one last time from this educator's loss, although it is so sad that it had to be such a tough teaching moment.
Originally posted at InjuryBoard by Mike Bryant

Real Stories Behind Food Poisoning

There is a real person behind every food poisoning. I'm reminded of that every time I sit down and talk to a family who has lost a loved one. So many times, we here at the InjuryBoard write this food alert or that outbreak. I try to write each story with an eye toward future safety and what could have been done differently. The point is to prevent another similar incident from happening again. I've appreciated it when I have been contacted after a post by a reader who thanks me for pointing out the safety consideration. I think it comforts people to know that something is being done to prevent future issues and even maybe to save lives in the future.

Locally the story of Stephanie Smith, 22 year old from Cold Spring, Minnesota who suffered severe cramping and diarrhea, then kidney failure and seizures as a result of eating a tainted hamburger. She was in a medically induced coma for nine weeks and since waking up, has not been able to walk. She was known as a dance instructor who loved to work with children.

The New York Times looked at the story and provided not only a heartbreaking video of her loss, but also tracked the story as to what it was that caused this tragedy to happen. How the burger came from frozen hamburger made by Cargill, which saved 25 percent in production costs by using a mix of trimmings and a mash-like product from slaughterhouses in Nebraska, Texas and Uruguay vs. whole meat .

Low-grade ingredients are cut from areas of the cow that are more likely to have had contact with feces, which carries E. coli. Cargill was relying upon the processing plants. The result is the type of product that can sicken people. But in this case changes a young woman's life forever.

A simple example of why we need to work to make the food we eat safer. Too many people have been hurt. Stephanie Smith was one of those.
Originally posted at InjuryBoard by Mike Bryant

Southern Minnesota Heroes Deserve Honor And Credit

What a night last week in Southern Minnesota. A night of multiple motor vehicle accidents and the need for immediate medical emergency responses. The Rochester Post Bulletin had the time line recently:

• At 3:21 p.m., a tour bus carrying 22 people crashes on Interstate 90, killing two people and injuring 20.

• At 5:15 p.m., a school bus carrying 22 students from Wabasha-Kellogg High School collided with a car on U.S. 63 North in Rochester, injuring eight students and seriously injuring the car's driver and passenger.

• Minutes later, an ambulance that was headed to the scene of the school bus crash was involved in a four-vehicle accident on Second Street Southwest. Two people were injured and had to be extricated from their vehicles.

• About 7:30 p.m. at Church of the Savior in southeast Rochester, a vehicle struck a pedestrian, then slammed into the church.

Four separate significance incidents, within four hours, all of which required quick responses. There was a need for police, sheriffs, troopers, firefighters, ambulance crews and helicopter personnel. There also the vital requirement of hospital and emergency room personnel . What a test for even a much larger area. It sounds like the test was not only met , but that it was exceeded in it's expectations.

I often talk to clients that will point out the difference that the emergency personal made. When I get the chance I thank these individuals for their past and future service. Hopefully, everyone will do that.
Originally posted at InjuryBoard by Mike Bryant

Company Lawyer Diagnosis The Condition Of The Austin Bus Driver

It has been interesting to read the different stories that have been looking for the answers to what happen in the tragic tour bus accident this week outside of Austin, Minnesota. I originally wondered if it was a medical condition or maybe the driver fell asleep.

Recently, MPR found that the driver's record included a seat belt violation from this year and a 2001 DWI in his personal vehicle. Probably, only important if there was more known about the drivers activities while the passengers were at the casino.

There has also been unanswered questions as to why the driver was on I-90. Apparently, that wasn't his expected route. There wasn't any weather that would have suggested a change. It would be important to know if maybe there was something going on that the driver knew about.

Now we have the lawyer that the company hired saying that "It's quite clear that he suffered an emergency medical event while driving the bus, and he's hospitalized for that." That may very well turn out to be true. But considering the State Patrol thinks it will be weeks before we know and that medical experts haven't come forward this sounds a lot like a defense.

I can assure you that he understands that a sudden medical emergency can be argued as an Act of God. If such a conclusion was drawn by a fact finder, there would be no liability what so ever. So hopefully, the investigations will get to the truth.

U S Senate Debate: Still No Talk About The 98,000 That Die Each Year

It's been interesting to watch the U S Senate debate today. There is more to go, so I'm sure they might just touch on just about everything. About 30 minutes ago, Senator McCain started the fraudulent claims that medical malpractice reform would make a significant difference. Sure, half of one percent savings by eliminating all claims would be a great difference. To your Insurance contributers Senator McCain.

Let's talk about the 98,000 people that die each year due to medical errors. Let's go after those numbers and reduce them. You do that and you will bring down malpractice claims. You will get rid of the few doctors that do a majority of the malpractice. You will save lives.

We will see how the rest of the night goes. Hopefully, it will get around to what is best for the American consumer.
